Below is the recipe that I’ve unofficially branded as “New Balance Granola Bars” Feel free to share!
4 cups old fashioned oats
1 cup whole wheat flour (or can use regular flour)
1/2 cup wheat germ
1/4 cup flaxseed
1 teaspoon baking soda
1/3 cup brown sugar
1/2 cup applesauce
2 huge spatula scoops of peanut butter (doesn't have to be exact, but it’s probably around 1- 1¼ cups)
1/2 cup honey
1 teaspoon vanilla
1 Tablespoon olive oil
mini chocolate chips/Reese peanut butter chips/raisins/sunflower seeds/coconut/chia seeds/dried fruit (basically anything you want to add)
Mix everything together, make sure it's not too dry that the bars won’t stick together (add more applesauce or peanut butter). Press firmly into a 8x8 square baking pan lined with aluminum foil. Bake at 350 degrees for 15 minutes or until lightly golden brown around the edges. Slice and dice!
