Frozen Yogurt on a Stick

This recipe is great now that the weather is getting warmer and can be changed to fit whatever you have in your fridge! This is also a terrific way to sneak vegetables and fruits into a treat! The fruit puree can be mixed into the yogurt base instead of swirling into the molds. Additionally, adding the granola serves as a nice crunchy base and helps keep the pops from melting.
You will need:
1 plastic ice-pop mold (6-8 count) OR paper Dixie cups
1-2 cups plain, Greek yogurt
2 cups of fruit or veggies, chopped (strawberries, blueberries, raspberries, peaches, bananas- can use frozen fruit as well)
Various kinds of sliced or whole pieces of fruit
4 Tbsp. pure honey
½ tsp. vanilla extract
Sprinkle of cinnamon
¾ cup granola
Mix-ins (chocolate chips, cereal, nuts)
1. In a blender or food processor, combine chopped fruit with enough coconut water to make a smooth consistency once blended. Set aside.
|1.||In a bowl, add yogurt, honey, cinnamon, and vanilla. Mix well.|
|2.||Pour the yogurt mixture into the ice pop molds, about 2/3 of the way full. Swirl in 3-4 Tbsp. of the pureed fruit mixture. Add in chunks of sliced fruit. Mix in other ingredients such as nuts, chopped chocolate, or unsweetened coconut.|
|3.||Sprinkle the mixture with granola. Insert sticks and freeze until hardened, about 2-3 hours.|

• Bananas + Mini dark chocolate chips
• Blueberries + Lemon zest + crushed walnuts
• Peaches + Raspberries + crumbled graham crackers
• Bananas + Spinach + Pineapple
