Enjoy the indulgence of French toast - gluten + vitamins! We experimented with the new sweet potato toast...not a ton of luck. But after some testing sweet potato French toast was born!
sweet potato french toast
2 sweet potatoes, sliced 1/2 inch thick
Splash of milk
1 tsp vanilla
2 tsp brown sugar
1 tsp cinnamon
1/2 tsp salt
1/4 cup powdered sugar
1/2 cup gluten-free flour
2-3 tbsp butter
Place the slices of sweet potato on a baking sheet and place in a 400 degree oven for 15 minutes
While the potatoes are baking, whisk together the eggs, milk, vanilla, brown sugar, cinnamon and salt in one shallow bowl, and in another shallow bowl mix together the powdered sugar and flour
Heat a frying pan on medium-high heat and melt some of the butter until it sizzles
Take one slice of sweet potato out of the oven and dip into the egg mixture first, then into the flour mixture and back into the egg mixture. Let the excess drip off and place in the pan.
Cook each slice for about 4 minutes on each side until brown and crispy. Transfer the cooked slices to a plate.
Repeat this process with the rest of the sweet potato slices, keeping the excess slices warm in the oven while you cook them in batches. (I turn the oven off after the 15 minutes is over and just let the uncooked slices sit in there)
Serve with maple syrup, butter and fresh fruit for a great gluten-free breakfast!
