Abbi’s Coconut Peanut Butter Energy Date Balls

These delicious date balls are the perfect fuel for longer, low-intensity workouts like a long run or hike. Packed with healthy fats and natural sugars, they are an ideal source for sustained energy.

  • 1 C walnuts
  • 1 C Dates
  • 1/4 C Unsweetened coconut flakes
  • 1/3 C Nut butter

Add all ingredients to a food processor and blend until you get a dough-like consistency. If the texture is too crumbly, add in more date or nut butter, if it is too sticky, add in more walnuts. When you have the right texture, roll into balls.

Abbi stores these in the fridge and packs them in a reusable snack size bag when it’s time for an adventure.

Hello! My name is Abbi Mae and I am an Xterra triathlete, sports nutritionist, On running ambassador and personal trainer based in Bend, Oregon. I love getting outside and getting after it. I am most happy when I am in the mountains whether that is trail running, mountain biking or backcountry skiing.

What is your philosophy for performance nutrition, and why?

My philosophy for performance nutrition is that every individual is different and therefore has different needs when it comes to nutrition. I also am a firm believer that food should be fun, should nourish our bodies, and taste good!

Any new activities, hobbies, goals you've picked up during the pandemic?

I have been working on my creativity in the kitchen during the pandemic. I love to experiment with my own recipes (sometimes they work out...sometimes they are a total fail haha)!

I have also been using the extra time to work on my business Wildly Well (nourishment, strength, and wellness programs for mountain athletes).

What's your favorite On gear for workouts and other adventures?
